After all, autumn is truly my favorite time of the year, and running a company that embraces this season is as exciting as it can be crazy.
As the days grow shorter and the air turns crisper, I’m wishing for it at the moment as we live in South Alabama and the weather here is still HOT, I eagerly anticipate the arrival of fall. With each falling leaf, I begin to dream of all the delicious baked goodies that soon fill our home with heavenly scents. The aroma of spiced cookies, rich pies, and warm breads wafting from the oven creates an atmosphere of cozy comfort. Knowing that we have an abundance of pecans on hand, those baked treats almost always find a way to include these tasty nuts, whether they’re nestled in a gooey pecan pie or sprinkled atop a batch of decadent brownies.
However, I must admit that many made-from-scratch recipes can be quite time-consuming, and life has a way of pulling us in numerous directions, making the idea of spending hours in the kitchen seem daunting. Between work, family commitments, and the hustle and bustle of fall activities, it can feel like a major undertaking to whip up a homemade dessert from scratch. But despite the challenges, the sweet and cozy scent of freshly baked cookies is far too alluring to pass up. Which is why this Butter Pecan Cookie recipe is the perfect solution if you’re short on time but still craving a homemade treat. With just a handful of ingredients and a simple process, you can whip up these delicious cookies in less than 30 minutes, from start to finish. Happy baking!
Butter Pecan Cookies
Ingredients:
3 cups All-Purpose Flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon Cinnamon
1 cup Unsalted Butter, melted
1 3/4 cup Brown Sugar
1/2 cup Granulated Sugar
1 Egg & 1 Egg Yolk
1 teaspoon Vanilla Extract
1 1/2 cups Pecan Pieces
3/4 cup Chocolate Chips (Not entirely necessary, but is chocolate ever not necessary?)
Instructions
Preheat oven to 350F
In a large mixing bowl, add the melted butter, brown sugar, and granulated sugar until well combined.
Next, add the egg, egg yolk, and vanilla extract to the butter and sugar mixture. Set this mixture aside.
Then add the rest of the dry ingredients to a separate bowl. Combine the flour, baking powder, baking soda, salt, and cinnamon, mix until fully incorporated.
Working in two batches, add the dry ingredients into the wet ingredients. Store until the dough comes together and is pulling away from the bowl.
Next, fold in the pecan pieces and chocolate chips. This may take a little elbow grease to get all those toppings into the dough but it will be well worth it.
Then grab baking sheet that has either been rubbed down with butter or sprayed with non-stick spray.
Now the messy part, using either a very small ice cream scoop or a large tablespoon, scoop the dough into balls and place them on the baking sheet, leaving approximately 2” between each cookie.
Bake them for 10 to 12 minutes or until the edges are set and the tops are a light golden brown.
Let them cool on the tray and enjoy!
Tips & Tricks
You can most definitely use a stand mixer if you would like. It will not change the cookies, and may result in a little less of an arm work out.
The cinnamon nor the chocolate chips are necessary but I truly love the combination of both together. Plus, the smell of the pecans and cinnamon just give the house that warm fall scent.
You don’t have to let the cookies cool all the way, I personally do not have the self control for that. However, they do finish baking while they cool so be warned the center may still be slightly doughy is you are grabbing one from the pan immediately after coming out of the oven.
